When you want a deeply comforting, aromatic soup that warms you from the inside out without standing over a stove for hours, restaurant broths loaded with hidden MSG, excessive processed sugars, and sodium will leave you feeling bloated and sluggish.
This magnificent Chicken Pho delivers a nutrient-dense and protein-rich functional meal that supports metabolic wellness, satisfies your savory cravings, and stays completely wholesome. Ready with effortless hands-off slow cooking, it’s a brilliant culinary masterpiece that brings traditional Vietnamese herbal comfort straight to your home kitchen.
Power of Charred Aromatics and Warming Spices
Traditional restaurant broths often rely on processed flavor enhancers and refined sweeteners that disrupt metabolic balance and drain your daily stamina.
We’ve optimized this classic favorite by combining pasture-raised chicken, charred ginger, charred onions, star anise, cinnamon, cloves, and mineral-rich bone broth. It provides incredible health benefits for blood sugar control and natural energy restoration by supplying clean lean protein, immune-boosting botanical spices, and digestive-supporting warmth to keep your body thriving.
Spice Toasting and Broth Clarification
Never drop raw, un-charred aromatics straight into your slow cooker or skip boiling your rice noodles separately, which can make your broth taste murky and your noodles soggy instead of achieving a crystal-clear soup with perfect texture.
Instead, use an expert flame-charring and separate-boiling protocol by charring your onions and ginger over an open flame first, toasting your whole spices until fragrant, and cooking your rice noodles independently just before serving.

kcalIngredients
- For the Aromatic Broth:
2.5 lbs pasture-raised chicken bone-in thighs or whole chicken pieces
1 large yellow onion (cut in half) & 4-inch piece of fresh ginger (cut in half lengthwise)
8 cups rich chicken bone broth or filtered water
2 star anise pods, 1 cinnamon stick, 3 whole cloves, and 1 tsp coriander seeds
2 tbsp coconut aminos or clean fish sauce (plus extra to taste)
1 tbsp unrefined monk fruit sweetener or coconut sugar
1 tsp fine sea salt
- For Serving & Garnishes:
8 oz brown rice noodles or low-carb kelp noodles
1 cup fresh bean sprouts, Thai basil leaves, and fresh cilantro
1 fresh lime cut into wedges & 1 red jalapeño pepper sliced thin
Directions
- Char Aromatics: Place the halved yellow onion and fresh ginger cut-side down directly on a hot skillet or over an open gas flame for 5 to 7 minutes until deeply charred and fragrant.
- Toast Whole Spices: In a dry skillet over medium heat, toast the star anise, cinnamon stick, cloves, and coriander seeds for 2 minutes until intensely aromatic. Transfer them into a spice bag or tea infuser.
- Slow Cook the Broth: Place the chicken pieces, charred onion, charred ginger, spice bag, chicken bone broth, coconut aminos, monk fruit sweetener, and sea salt into your slow cooker. Cover and cook on LOW for 6 hours (or HIGH for 3-4 hours).
- Shred the Chicken: Remove the cooked chicken pieces from the slow cooker, let them cool slightly, and shred the tender meat away from the bones. Discard the bones and skin, then return the shredded chicken back into the warm broth. Strain the broth if desired for a cleaner finish.
- Prepare Noodles: Cook your brown rice noodles according to package instructions until tender, then rinse thoroughly with cool water and divide among serving bowls.
- Assemble & Serve: Ladle the piping hot, aromatic Chicken Pho broth and tender chicken over the noodles. Garnish with fresh bean sprouts, Thai basil, cilantro, jalapeño slices, and a squeeze of fresh lime juice!
