When you are craving a deeply warming, savory comfort meal, skip the heavy restaurant pastries laden with refined white flours and inflammatory trans fats.
This vibrant Chicken Potpie delivers a high-protein and nutrient-dense functional meal that satisfies your appetite, supports metabolic health, and stays completely gluten-free. Ready in under an hour, it’s a wholesome dinner savior that brings cozy Japanese curry flavors together with a flaky, golden crust.
Why Japanese Curry Elevates the Classic Pie
Traditional potpies rely on monotonous flour-and-milk gravies that lack depth and character.
We’ve transformed this comforting favorite by infusing tender chicken and root vegetables into a rich, aromatic Japanese curry roux seasoned with turmeric, apples, and savory warmth. It provides incredible health benefits for blood sugar control and natural energy restoration by combining antioxidant-rich spices with clean protein and root vegetables, keeping your metabolism happy and balanced.
Mastering the Flaky Golden Crust
Never slap a soggy or dense dough over your wet filling, which prevents the pastry from baking into a crisp, buttery topping.
Instead, use an expert pastry-baking technique by chilling your pie crust thoroughly before placing it over the warm curry filling and venting the center to let steam escape for maximum crispiness.

kcalIngredients
- For the Curry Chicken Filling:
1.5 lbs pasture-raised chicken thighs, cut into bite-sized pieces
1 tbsp avocado oil or extra-virgin olive oil
1 medium yellow onion, diced
2 carrots, peeled and sliced into rounds
2 medium sweet potatoes, cubed (instead of high-glycemic white potatoes!)
3 cloves garlic, minced & 1 tbsp fresh ginger, grated
2 cups high-quality collagen-rich chicken bone broth
2 tbsp Japanese curry powder (or homemade gluten-free curry roux)
1 tbsp coconut aminos & 1 tsp sea salt
- For the Low-Carb Crust:
2 cups blanched almond flour
4 tbsp melted grass-fed butter or ghee
1 large pasture-raised egg
½ tsp sea salt
Directions
- Sear Chicken: Heat oil in a large skillet over medium-high heat. Add chicken pieces, season with salt, and sear 5-6 minutes until golden. Remove to a plate.
- Sauté Veggies: Add onion, carrots, sweet potatoes, garlic, and ginger to the skillet. Sauté 4-5 minutes until fragrant.
- Simmer Curry: Stir in Japanese curry powder and bone broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes until vegetables soften. Return chicken to the pan and mix well. Transfer filling to a baking dish.
- Make Crust: In a bowl, mix almond flour, melted butter, egg, and sea salt until a dough forms. Roll or press the dough evenly over the top of the curry filling.
- Bake: Bake at 400°F (200°C) for 20-25 minutes until the almond flour crust is deeply golden brown and the curry filling is bubbling hot.
- Serve: Let cool for 5 minutes, garnish with green scallions, and serve warm!
