When you are craving a deeply comforting, elegant bistro meal, skip the heavy restaurant braises thickened with refined white flour rouxs and inflammatory oils.
This vibrant Coq au Vin delivers a high-protein and nutrient-dense functional meal that satisfies your appetite, supports metabolic health, and stays completely gluten-free. Ready in under an hour and a half, it’s a wholesome dinner savior that brings timeless French culinary mastery straight to your home kitchen.
The Mindful Evolution of the French Classic
Traditional Coq au Vin recipes often rely on refined wheat flours to thicken the sauce, triggering systemic inflammation and severe insulin spikes that cause fatigue.
We’ve elevated this cozy favorite by combining pasture-raised chicken thighs, smoky bacon lardons, earthy mushrooms, rich bone broth, and a gluten-free arrowroot reduction. It provides incredible health benefits for blood sugar control and natural energy restoration without the heavy afternoon slump, keeping your hormones happily balanced.
Tips for the Perfect Braise
Never crowd your Dutch oven when searing the chicken, or you will steam the meat instead of achieving a deep, flavorful crust.
Instead, use an expert braising technique by crisping your bacon and searing your chicken in batches, then simmering it slowly in a rich red wine reduction so the meat becomes meltingly tender.

1 tsp fine sea salt and ½ tsp black pepper
8 oz cremini mushrooms, quartered
1 cup frozen pearl onions, thawed
3 carrots, peeled and sliced into thick rounds
3 cloves garlic, minced
- For the Wine Sauce:
2 cups dry red wine (such as Pinot Noir or Burgundy)
2 cups rich collagen-rich chicken bone broth
2 tbsp tomato paste
2 sprigs fresh thyme and 1 bay leaf
1 tbsp arrowroot powder (mixed with 1 tbsp cold water for a gluten-free thickening slurry)
- For the Garnish:
Fresh chopped parsley.
Directions
- Crisp Bacon: In a large heavy Dutch oven over medium heat, cook diced bacon until crispy and rendered. Remove bacon with a slotted spoon, leaving the fat in the pot.
- Sear Chicken: Season chicken pieces with salt and pepper. Sear in the bacon fat over medium-high heat for 4-5 minutes per side until deeply golden brown. Transfer chicken to a plate.
- Sauté Aromatics: Add mushrooms, carrots, and pearl onions to the pot. Sauté 5 minutes until browned. Add minced garlic and cook for 60 seconds until fragrant.
- Deglaze & Simmer: Pour in the red wine and chicken bone broth, scraping up all browned bits from the bottom. Stir in tomato paste, thyme, bay leaf, and the cooked bacon. Return chicken to the pot.
- Braise: Bring to a boil, then reduce heat to low, cover, and simmer gently for 45-50 minutes until the chicken is fork-tender.
- Thicken & Serve: Stir in the arrowroot slurry during the last 5 minutes to thicken the sauce into a glossy glaze. Garnish with fresh parsley and serve warm!
