Green Avocado Hummus

Green Avocado Hummus

Originally inspired by a recipe from Linda McCartney, this unusual but delicious hummus is an absolute crowd-pleaser. Reviewers rave that it perfectly bridges the gap between a traditional Middle Eastern dip and a creamy guacamole, making it the ultimate fusion appetizer.

The Ultimate Creamy Texture

Blending hearty garbanzo beans and traditional tahini with a large, ripe avocado creates an incredibly smooth and rich texture. A touch of sour cream adds to the velvety consistency, while fresh lemon juice and crushed garlic keep the flavor bright and punchy. Because it requires zero cooking, this vibrant dip can be whipped up in your food processor in just 15 minutes.

Ingredients

  • The Base:

  • 1 (16 ounce) can garbanzo beans, drained and rinsed

  • 1 1/2 teaspoons tahini

  • 1/2 lemon, juice of

  • 2 tablespoons sour cream

  • 1 1/2 tablespoons olive oil

  • 3 garlic cloves, crushed

  • 1 large ripe avocado, peeled and stoned

  • Seasonings:

  • Salt, to taste

  • Black pepper, to taste

Directions

  • Puree the Base: Place all of the base ingredients (garbanzo beans, tahini, lemon juice, sour cream, olive oil, crushed garlic, and avocado) along with the salt and pepper into a food processor. Puree the mixture until it is well mixed and completely smooth.
  • Taste and Adjust: Season the hummus to taste with additional salt and pepper, and add more lemon juice if necessary to brighten the flavors.
  • Chill: Transfer the blended hummus to a storage container, cover it tightly, and chill it in the refrigerator until you are ready to serve.

Notes

  • Boost the Color: As noted by Linda McCartney, adding a few chopped fresh spinach leaves to the food processor will significantly enhance the vibrant green color of the dip and add extra nutrients!
  • Make it Lighter: Several reviewers highly recommend swapping the 2 tablespoons of sour cream for thick Greek yogurt or drained plain yogurt to reduce the fat content without losing the creamy texture.
  • Flavor Upgrades: Because the avocado makes the dip so incredibly creamy and mild, many home cooks suggest adding the juice of a whole lemon instead of just half for extra tang. You can also add a pinch of cumin, cayenne pepper, onion powder, or extra garlic powder to give it more of a savory kick.
  • Adjusting Consistency: If your hummus is too thick, add a dash more olive oil while blending to achieve a smoother finish.
