Origin Chicken paella

The rich culinary tradition of paella traces its roots back to Valencia, Spain, where it was originally a humble, restorative midday meal for farmers and laborers working in the rice fields. Historically, workers would gather around a wide, shallow pan (the paellera) placed over an open wood fire, simmering short-grain rice with whatever local ingredients were available—often rabbit, snails, and fresh beans. As the dish gained global acclaim, home cooks resourcefully adapted it to feature more accessible proteins like chicken and seafood. Today, recognizing the profound health benefits of saffron and vegetables—which are exceptionally rich in antioxidants and mood-boosting compounds—modern home cooks celebrate this vibrant rice dish as a highly functional, nutrient-dense centerpiece that perfectly balances clean eating with robust, traditional indulgence.

Why I Love This Recipe

I love how this recipe transforms simple pantry staples and standard chicken thighs into a genuinely crave-worthy, highly interactive family meal with surprisingly little active prep. It completely eliminates the sluggish, heavy feeling that often accompanies heavy risotto or cream-based pasta dishes, relying instead on a clean, flavorful broth to naturally plump the rice. It is one of the absolute best quick and easy healthy dinner ideas because the wide pan does all the heavy lifting to meld the flavors together. You can serve your Chicken paella classically straight from the skillet to the table, pair it with a crisp green salad, or pack the flavorful leftovers for an incredible office lunch the next day.

Tips for the Perfect Socarrat

To achieve beautifully distinct, flavorful grains of rice and a deeply caramelized crust rather than a gummy, mushy porridge, managing your pan heat and stirring technique is absolutely critical. First, once you add the broth and distribute the rice evenly in the pan, you must stop stirring completely. This is an essential expert paella-making technique; leaving the rice completely undisturbed allows the liquid to absorb evenly and, most importantly, allows the bottom layer of rice to toast and crisp against the hot metal. This crispy, golden bottom layer is known as the socarrat, and it is widely considered the most prized, delicious part of any authentic Chicken paella.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

  • 2 tbsp extra virgin olive oil

  • 1 medium yellow onion, finely diced

  • 1 large red bell pepper, sliced into thin strips

  • 4 cloves garlic, finely minced

  • 1 ½ cups Bomba rice (or Arborio/short-grain rice)

  • 1 tbsp smoked paprika (pimentón)

  • 1 large pinch of saffron threads, soaked in 2 tbsp warm water

  • 1 cup crushed canned tomatoes

  • 3 ½ cups low-sodium chicken broth, warmed

  • 1 cup frozen sweet peas, thawed

  • 1 tsp fine sea salt

  • ½ tsp freshly ground black pepper

  • For Garnish: Fresh parsley, finely chopped, and plenty of lemon wedges

Directions

  • Sear the Chicken: Heat the extra virgin olive oil in a traditional paella pan or a very large, wide, heavy-bottomed skillet over medium-high heat. Season the chicken pieces with salt and pepper. Add the chicken to the pan and sear for 5 to 6 minutes until deeply golden brown on all sides. Remove the chicken to a plate and set aside.
  • Sauté the Vegetables: Reduce the heat to medium. Add the finely diced onion and sliced red bell pepper to the residual oil in the pan. Sauté for 4 to 5 minutes until soft and sweet. Stir in the minced garlic and smoked paprika, cooking continuously for 1 minute until highly fragrant.
  • Toast the Rice: Add the dry Bomba rice directly to the skillet. Stir vigorously for 1 to 2 minutes, allowing the grains to toast slightly and absorb the beautifully seasoned oils.
  • Build the Broth: Pour in the crushed tomatoes, the warm chicken broth, and the saffron along with its soaking water. Stir everything well, scraping up any browned bits from the bottom of the pan.
  • Simmer and Settle (Crucial Step): Return the cooked chicken to the pan, distributing it evenly. From this point forward, do not stir the rice! Bring the liquid to a rapid simmer, then immediately lower the heat to medium-low.
  • Develop the Socarrat: Let the paella simmer uncovered and undisturbed for 15 to 18 minutes. The rice will slowly absorb the broth. During the final 3 minutes, scatter the thawed peas over the top. Listen closely to the pan—when the liquid is gone, you should hear a gentle crackling sound. Let it crackle for 1 to 2 minutes to form the crispy socarrat crust on the bottom (be careful not to burn it!).
  • Rest and Serve: Remove the pan from the heat. Cover the paella loosely with a clean kitchen towel or foil and let it rest for 5 minutes (this helps the top layer of rice finish steaming). Garnish heavily with fresh parsley and serve your hot Chicken paella immediately with plenty of fresh lemon wedges!

Notes

  • The Right Rice: Bomba or Calasparra rice is traditional and absorbs liquid beautifully without becoming mushy. If you cannot find Spanish rice, Italian Arborio is the next best substitute. Never use long-grain or Basmati rice for paella.
  • Seafood Addition: If you want a mixed paella, gently press a dozen large, peeled shrimp into the top of the rice during the final 5 minutes of cooking until they turn opaque and pink.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a tiny splash of broth or water.
