Ready in just over an hour, it’s a brilliant culinary masterpiece that brings the golden luxury of a classic roast dinner straight to your home kitchen.
The Secrets to Ultra-Crispy Skin and Juicy Meat
Traditional roasting methods often result in dry breast meat and rubbery skin because of improper oven temperatures and lack of moisture sealing.
We’ve optimized this classic favorite by utilizing a whole pasture-raised chicken, a savory herb-infused butter or ghee rub, and high-heat roasting techniques. It provides incredible health benefits for blood sugar control and natural energy restoration by supplying clean, high-quality amino acids, essential B vitamins, and nourishing healthy fats to keep your energy balanced and your appetite happily sustained.
Pro-Tips for Achieving Maximum Tenderness
Never skip letting your chicken come to room temperature before roasting or carving it immediately after it leaves the oven, which causes the delicious natural juices to escape onto the cutting board.
Instead, use an expert trussing and resting technique by patting the skin completely dry, rubbing aromatics under the skin, and allowing the roasted bird to rest undisturbed for fifteen minutes before carving.

kcalIngredients
- For the Whole Chicken & Rub:
1 whole pasture-raised chicken (about 4 to 5 lbs), patted completely dry inside and out
3 tbsp unsalted butter or grass-fed ghee (softened)
3 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped & 1 tbsp fresh thyme leaves
1.5 tsp fine sea salt & 1 tsp freshly ground black pepper
1 lemon (halved) & 4 sprigs of fresh thyme (for the cavity)
1 tbsp avocado oil (for the roasting pan)
Directions
- Preheat Oven & Prep Bird: Preheat your oven to 425°F (220°C). Ensure your whole chicken is patted thoroughly dry with paper towels for optimal crispy skin.
- Mix Herb Butter: In a small bowl, combine the softened butter (or ghee), minced garlic, chopped rosemary, thyme leaves, sea salt, and black pepper into a fragrant herb paste.
- Massage & Stuff: Gently loosen the skin over the chicken breasts using your fingers, and rub half of the herb butter directly under the skin against the meat. Rub the remaining butter all over the exterior skin. Stuff the cavity with the lemon halves and extra thyme sprigs.
- Roast to Golden Perfection: Place the chicken breast-side up in a cast-iron skillet or roasting pan coated with avocado oil. Roast at 425°F for 15 minutes, then reduce the oven temperature to 375°F (190°C) and continue roasting for another 55 to 65 minutes until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh and the juices run clear.
- Rest & Carve: Transfer the roasted chicken to a carving board and let it rest undisturbed for 15 minutes to lock in the natural juices. Carve into portions and serve warm!
