When you need a deeply comforting, restorative meal that warms you from the inside out, standard heavy takeout soups loaded with excess sodium and refined noodles will only weigh you down and leave you feeling sluggish.
This magnificent Chicken Arroz Caldo delivers a nutrient-dense and restorative functional meal that satisfies your hunger, supports metabolic wellness, and stays completely wholesome. Ready in under an hour, it’s a brilliant one-pot masterpiece that brings the healing, fragrant comfort of traditional Filipino ginger rice porridge straight to your home kitchen.
The Therapeutic Power of Fresh Ginger and Garlic
Traditional comfort soups often rely on processed broths and excessive starches that trigger blood sugar fluctuations and leave you feeling sluggish.
We’ve optimized this comforting classic by combining pasture-raised chicken pieces, aromatic fresh ginger, garlic, jasmine rice, and golden turmeric. It provides incredible health benefits for blood sugar control and natural energy restoration by supplying clean lean protein, powerful anti-inflammatory compounds from ginger, and easily digestible carbohydrates to keep your energy balanced and your digestion thriving.
For Achieving Velvety Porridge Consistency
Never rush your rice or use too little liquid, which prevents the grains from breaking down into the characteristic creamy, velvety texture essential to a proper arroz caldo.
Instead, use an expert simmering and rice-blooming technique by sautéing your aromatics thoroughly, toasting the rice grains in chicken fat, and simmering slowly while stirring frequently until the rice completely melts into the broth.

- For the Porridge Base:
1.5 lbs pasture-raised chicken thighs or drumsticks (bone-in for maximum flavor)
1 cup jasmine rice, rinsed and drained
2 tbsp avocado oil or unrefined coconut oil
1 medium yellow onion, chopped & 4 cloves garlic, minced
3-inch piece of fresh ginger, peeled and julienned
2 tbsp coconut aminos or fish sauce
6-7 cups rich chicken bone broth
½ tsp ground turmeric & 1 tsp fine sea salt
- For the Toppings:
Toasted garlic chips, sliced scallions, hard-boiled eggs, and fresh calamansi or lime wedges
Directions
- Sauté Aromatics: Heat avocado oil in a large heavy pot or Dutch oven over medium heat. Add the chopped onions, minced garlic, and julienned ginger. Sauté for 3-5 minutes until fragrant and translucent.
- Brown Chicken: Add the bone-in chicken pieces to the pot, searing them for 4-5 minutes until lightly browned on all sides. Stir in the coconut aminos (or fish sauce) and ground turmeric.
- Toast the Rice: Pour the rinsed jasmine rice directly into the pot with the chicken. Stir continuously for 2-3 minutes, allowing the grains to toast slightly in the savory pan oils.
- Simmer Slowly: Pour in the chicken bone broth and sea salt. Bring the mixture to a boil, then reduce the heat to low, cover partially, and simmer for 30 to 35 minutes, stirring occasionally so the rice breaks down and creates a thick, velvety porridge.
- Shred Chicken: Remove the chicken pieces from the pot, shred the meat off the bones using two forks, and return the tender meat back into the bubbling porridge. Season with extra salt if needed.
- Ladle & Garnish: Ladle the hot Chicken Arroz Caldo into warm bowls. Top generously with crispy toasted garlic bits, fresh scallions, soft-boiled egg halves, and a squeeze of fresh lime juice!
Notes
- Restorative Nourishment: Packed with collagen from bone-in chicken, immune-boosting ginger, and easily digestible whole grains to soothe your body and restore vitality.
- Storage: Store leftover arroz caldo in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of water, as the rice will continue to absorb liquid as it sits!
