Bold, savory, and incredibly satisfying, these Steak Fajita Power Bowls are the ultimate high-protein meal to keep you energized throughout the day. Utilizing lean cuts of beef like flank or skirt steak provides an exceptional source of essential amino acids and iron, which aligns perfectly with expert insights on the nutritional benefits of high-quality beef. Paired with a vibrant array of sautéed bell peppers and onions, this bowl delivers a massive boost of antioxidants and vitamin C, fully utilizing the incredible health benefits of fresh peppers to create a perfectly balanced, nutrient-dense meal.

Origin Steak Fajita Power Bowls

The fajita originated in the 1930s in the ranch lands of South Texas, where Mexican vaqueros were often partially paid with less desirable cuts of meat like skirt steak. They masterfully tenderized and grilled these cuts over open campfires, creating a culinary legacy that honors the rich, cross-cultural history of Tex-Mex cuisine. This modern power bowl adaptation takes those classic, smoky flavors and deconstructs them over a bed of complex carbohydrates like quinoa or brown rice, transforming a traditional hands-on meal into a convenient, fork-friendly staple.

Why I Love This Recipe

It is an absolute lifesaver for busy weekdays, serving as a brilliant foundation for smart and efficient meal prep strategies that ensure you have a colorful, deeply satisfying, and perfectly portioned lunch ready to grab right out of the refrigerator.

Ingredients

  • 1 lb lean flank steak or skirt steak, sliced against the grain into thin strips

  • 1 large red bell pepper, sliced into strips

  • 1 large green bell pepper, sliced into strips

  • 1 medium yellow onion, sliced

  • 2 cups cooked brown rice or quinoa

  • 2 tbsp extra-virgin olive oil (divided)

  • 1 tbsp chili powder

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp kosher salt

  • 1/4 tsp freshly ground black pepper

  • 1 fresh lime, cut into wedges

  • 1/4 cup fresh cilantro, roughly chopped

Directions

  • In a medium mixing bowl, toss the thinly sliced steak strips with 1 tablespoon of extra-virgin olive oil, chili powder, ground cumin, smoked paprika, garlic powder, salt, and black pepper until the meat is evenly coated with the spices.
  • Heat a large cast-iron skillet over medium-high heat until very hot. Add the seasoned steak strips in a single layer. Sear for 2-3 minutes per side until beautifully browned and slightly charred. Remove the steak from the skillet and set aside on a plate to rest.
  • In the same hot skillet, add the remaining 1 tablespoon of olive oil. Toss in the sliced red bell pepper, green bell pepper, and yellow onion.
  • Sauté the vegetables for 5-7 minutes, scraping up any browned bits from the steak, until they are tender and slightly blistered at the edges. Remove the skillet from the heat.
  • To assemble the bowls, divide the cooked brown rice or quinoa evenly among four serving bowls.
  • Top the rice with a generous scoop of the blistered fajita vegetables and a portion of the rested steak strips.
  • Garnish each bowl with fresh cilantro and a squeeze of fresh lime juice right before serving.

Notes

  • The Perfect Slice: To ensure your steak is incredibly tender and easy to chew, always slice the raw meat against the natural grain (the muscle fibers). Partially freezing the steak for 15 minutes before cutting makes slicing it thinly a breeze.
  • Meal Prep Storage: Allow all components to cool completely before portioning them into airtight glass containers. They will stay fresh in the refrigerator for up to 4 days and reheat beautifully in the microwave.
  • Bowl Add-Ins: Elevate your bowl by adding a scoop of fresh guacamole, black beans, or a drizzle of plain Greek yogurt for extra creaminess and flavor!
