Ingredients

  • 4 chicken breasts or thighs, cut into chunks

  • 2 cups rhubarb, chopped

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tbsp curry powder

  • 1 tsp ginger, grated

  • 1 tbsp olive oil

  • 1 cup coconut milk or cream

  • ½ cup chicken broth

  • Salt and pepper to taste

Directions

  • Heat olive oil in a skillet over medium heat.
  • Add chicken pieces and cook until lightly browned. Remove and set aside.
  • In the same pan, sauté onion, garlic, and ginger until soft.
  • Stir in curry powder and cook for 1 minute.
  • Add chopped rhubarb, coconut milk, and chicken broth.
  • Simmer for 5–7 minutes until rhubarb softens.
