  • 1 cup cooked chicken, diced

  • 2 eggs, beaten

  • 1 cup mixed vegetables (carrots, peas, corn)

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil

  • 1 tbsp vegetable oil

  • 2 cloves garlic, minced

  • 2 green onions, chopped

  • Salt and pepper to taste

Directions

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add garlic and sauté for a few seconds until fragrant.
  • Add diced chicken and cook for 2–3 minutes.
  • Push the chicken to one side and pour beaten eggs into the pan.
