When the weather turns cool and you crave a deeply comforting, nourishing meal, standard canned soups or heavy restaurant stews packed with refined starches and hidden sodium will leave you feeling bloated and sluggish.
This magnificent Chicken Stew delivers a nutrient-dense and protein-rich functional meal that satisfies your hunger, supports metabolic wellness, and stays completely wholesome. Ready in under an hour, it’s a brilliant one-pot masterpiece that brings cozy, wholesome comfort straight to your home kitchen.
The Wholesome Power of Root Vegetables and Bone Broth
Traditional comfort stews often rely on processed thickeners and heavy refined creams that trigger blood sugar fluctuations and drain your energy.
We’ve optimized this classic favorite by combining tender pasture-raised chicken, fiber-packed carrots, celery, baby potatoes, and nutrient-dense chicken bone broth. It provides incredible health benefits for blood sugar control and natural energy restoration by supplying steady complex carbohydrates, immune-supporting micronutrients, and clean, high-quality protein to keep your energy balanced all day long.
Achieving Maximum Broth Depth
Never rush the simmering process or add your tender vegetables too early, which turns your potatoes into mush and prevents the flavors from fully melding together.
Instead, use an expert layering and slow-simmering technique by searing your chicken first, sautéing your aromatics to build a rich flavor base, and adding root vegetables progressively so everything cooks to tender perfection.

kcalIngredients
- For the Stew Base:
1.5 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized chunks
2 tbsp avocado oil or grass-fed butter
1 large yellow onion, diced & 3 cloves garlic, minced
3 carrots, peeled and sliced into rounds
3 stalks celery, sliced
1 lb baby yellow potatoes, halved (or cubed starchy potatoes)
4 cups rich chicken bone broth
1 tsp dried thyme, 1 bay leaf, 1.5 tsp fine sea salt, and ½ tsp black pepper
- For Thickening & Finish:
2 tbsp arrowroot powder (mixed with 2 tbsp cold water for a clean thickening slurry)
2 tbsp fresh chopped parsley (for garnish)
Directions
- Sear the Chicken: Heat avocado oil or butter in a large heavy Dutch oven over medium-high heat. Season the chicken chunks with sea salt and black pepper, add them to the pot, and sear for 4-5 minutes until lightly browned. Remove chicken to a plate.
- Sauté Aromatics: In the same pot, add the diced yellow onion, minced garlic, sliced carrots, and celery. Sauté for 5-6 minutes until the vegetables begin to soften and become fragrant.
- Simmer with Broth & Potatoes: Pour in the rich chicken bone broth, scraping up any browned bits from the bottom of the pot. Add the halved baby potatoes, dried thyme, and bay leaf. Return the seared chicken and its juices back into the pot.
- Cook Until Tender: Bring the stew to a boil, then reduce heat to low, cover, and simmer gently for 25 to 30 minutes until the potatoes and carrots are fork-tender and the chicken is fully cooked.
- Thicken & Finish: Stir in the arrowroot slurry and let the stew simmer uncovered for 3-5 minutes until the broth thickens into a rich, velvety consistency. Remove the bay leaf.
- Garnish & Serve: Ladle the hot Chicken Stew into bowls, garnish with fresh chopped parsley, and serve warm!
