Chicken Tikka Masala

Chicken Tikka Masala

Rich, vibrant, and bursting with aromatic spices, a perfectly crafted Chicken Tikka Masala is the ultimate comfort food for a cozy weeknight dinner. By marinating tender chicken pieces in a spiced yogurt blend before simmering them in a luscious tomato-based curry, you create a macro-friendly dish that completely eliminates the need to rely on heavy restaurant takeout. This smart, homemade approach aligns perfectly with expert nutritional advice on the potent anti-inflammatory properties of turmeric and ginger, which are essential for reducing cellular inflammation and supporting overall wellness. Furthermore, pairing this robust sauce with lean poultry delivers the essential, muscle-repairing amino acids your body requires to stay full and energized without the heavy sluggishness often associated with ultra-processed meals.

Origin Chicken Tikka Masala

Despite its staple status in Indian restaurants globally, the true origin of Chicken Tikka Masala is fiercely debated, with most culinary historians agreeing it was actually invented in the United Kingdom. Legend has it that in the 1970s, a South Asian chef in Glasgow, Scotland, improvised the creamy tomato sauce to satisfy a customer who complained that his traditional dry roasted chicken tikka needed gravy. Today, it stands as a testament to massive cultural fusion, proudly recognized as one of Britain’s most popular national dishes and a prime example of culinary adaptation. This contemporary evolution beautifully demonstrates how traditional tandoori cooking techniques can be seamlessly merged with a rich, gravy-loving Western palate to create a universally beloved modern classic.

Why I Love This Recipe

I love that this recipe relies almost entirely on accessible spices and completely shatters the myth that cooking authentic-tasting curries at home requires highly technical culinary skills. The yogurt marinade guarantees incredibly tender, juicy chicken every single time, even if you are just using a standard stovetop skillet instead of a traditional clay tandoor oven. Furthermore, this dish is a phenomenal superstar for smart, time-saving weekly meal prep routines, as the complex spices continue to meld and deepen in the fridge, meaning your Wednesday lunch will taste infinitely richer and more complex than it did on day one!

Ingredients

  • For the Chicken Marinade:

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

  • 1/2 cup plain Greek yogurt

  • 1 tbsp fresh lemon juice

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 tsp garam masala

  • 1 tsp smoked paprika

  • 1/2 tsp ground turmeric

  • 1/2 tsp kosher salt

  • For the Masala Sauce:

  • 2 tbsp extra-virgin olive oil or ghee

  • 1 large yellow onion, finely diced

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp garam masala

  • 1/2 tsp chili powder (adjust for heat)

  • 1 can (14 oz) tomato purée or crushed tomatoes

  • 1/2 cup heavy cream or full-fat coconut milk (for dairy-free)

  • 1/2 tsp kosher salt

  • Fresh cilantro, chopped (for garnish)

Directions

  • Marinate the Chicken: In a large bowl, combine the Greek yogurt, lemon juice, minced garlic, grated ginger, garam masala, smoked paprika, turmeric, and kosher salt. Add the cubed chicken and toss to coat completely. Cover and refrigerate for at least 30 minutes (or up to overnight for maximum tenderness).
  • Sear the Chicken: Heat 1 tablespoon of olive oil (or ghee) in a large heavy-bottomed skillet or Dutch oven over medium-high heat. Add the marinated chicken pieces in a single layer (shake off excess marinade). Cook for 5 to 6 minutes, turning once, until beautifully browned on the edges. The chicken does not need to be fully cooked yet. Transfer the chicken to a clean plate.
  • Sauté the Aromatics: Lower the heat to medium. In the same skillet, add the remaining 1 tablespoon of oil. Add the finely diced yellow onion and cook for 5 to 7 minutes until soft and deeply caramelized, scraping up any browned bits from the chicken. Add the minced garlic and grated ginger, cooking for 1 more minute until fragrant.
  • Bloom the Spices: Stir in the coriander, cumin, garam masala, and chili powder. Cook for 30 seconds to release the essential oils in the spices.
  • Build the Sauce: Pour in the tomato purée and kosher salt. Reduce the heat to medium-low, cover, and let the sauce simmer gently for 10 to 15 minutes so the flavors can deeply meld and the sauce thickens.
  • Combine and Simmer: Return the seared chicken (and any juices from the plate) back into the tomato sauce. Simmer for 10 minutes, or until the chicken is completely cooked through and tender.
  • Make it Creamy: Remove the skillet from the heat. Slowly stir in the heavy cream (or coconut milk) until the sauce becomes a vibrant, creamy orange color.
  • Garnish and Serve: Taste and adjust salt if necessary. Garnish generously with freshly chopped cilantro and serve piping hot over warm basmati rice or with fresh garlic naan!

Notes

  • The Secret to Tender Chicken: Don’t skip the yogurt marinade! The lactic acid in the yogurt gently tenderizes the meat while injecting it with deep flavor, preventing it from drying out in the pan.
  • Make it Dairy-Free: Simply swap the Greek yogurt for a plant-based yogurt (or coconut cream) in the marinade, and use full-fat canned coconut milk for the sauce.
  • Storage: This curry is incredible for meal prep! Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave.
