  • 2 medium zucchini, diced

  • 1 large red bell pepper, diced

  • 1 large yellow bell pepper, diced

  • 1 medium red onion, chopped

  • 2 tbsp extra-virgin olive oil

  • 1/2 tsp kosher salt

  • 1/2 tsp freshly ground black pepper

  • For the Ricotta Filling & Sauce:

  • 15 oz (about 2 cups) whole milk ricotta cheese

  • 1 large egg

  • 1/4 cup grated Parmesan cheese

  • 2 cups fresh baby spinach, roughly chopped

  • 1 jar (24 oz) high-quality marinara sauce

  • 9 no-boil (oven-ready) lasagna noodles

  • 2 cups shredded part-skim mozzarella cheese

  • Fresh basil leaves (for garnish)

Directions

  • Roast the Vegetables: Preheat your oven to 425°F (220°C). Place the diced zucchini, bell peppers, and red onion on a large baking sheet. Drizzle with the olive oil, salt, and black pepper, tossing to coat completely. Roast for 15 to 20 minutes until the vegetables are tender and slightly caramelized at the edges. Remove from the oven and lower the temperature to 375°F (190°C).
  • Make the Ricotta Mixture: In a medium bowl, mix together the ricotta cheese, egg, grated Parmesan cheese, and chopped fresh spinach until well combined.
  • Layer 1 (Sauce & Noodles): Spread about 1/2 cup of the marinara sauce evenly across the bottom of a 9×13 inch baking dish. Lay down 3 no-boil lasagna noodles side by side.
  • Layer 2 (Cheese & Veggies): Spread half of the ricotta and spinach mixture evenly over the noodles. Top with half of the roasted vegetables. Drizzle another 1/2 cup of marinara sauce over the vegetables, and sprinkle with 1/2 cup of shredded mozzarella.
  • Repeat Layers: Add another layer of 3 noodles. Spread the remaining ricotta mixture, followed by the remaining roasted vegetables, 1/2 cup of marinara sauce, and another 1/2 cup of mozzarella.
  • Top Layer: Add the final 3 noodles. Pour the remaining marinara sauce over the top, making sure the noodles are completely covered so they soften properly in the oven. Top evenly with the remaining 1 cup of mozzarella cheese.
  • Bake: Spray a piece of aluminum foil with non-stick cooking spray (so the cheese doesn’t stick) and cover the baking dish tightly. Bake for 35 minutes. Remove the foil and bake for an additional 10 to 15 minutes until the cheese is bubbling and deeply golden brown.
  • Rest and Serve: This is crucial—let the lasagna rest for at least 15 minutes before slicing! Garnish with fresh basil and serve warm.

Notes

  • The No-Boil Secret: Oven-ready noodles save an immense amount of time, but they must be completely covered by sauce or cheese to cook properly. If any edges are exposed, they will become hard and crunchy.
