  • Salt and black pepper to taste

  • 4 slices soft sandwich bread (white, brioche, or sourdough)

  • 1 tbsp butter, softened (for the bread)

  • 2 handfuls crisp lettuce (like romaine or iceberg)

  • ¼ cup tartar sauce (store-bought or homemade)

Directions

  • Set up a breading station with three shallow bowls. Place the flour in the first bowl, the beaten egg in the second, and the panko breadcrumbs mixed with the garlic powder, smoked paprika, salt, and pepper in the third.
  • Pat the fish fingers completely dry with a paper towel. Dredge each piece of fish first in the flour (shaking off the excess), then dip it into the egg, and finally coat it thoroughly in the seasoned panko breadcrumbs, pressing gently so the crumbs adhere.
  • Heat the oil in a large non-stick skillet over medium-high heat. Once the oil is hot and shimmering, add the breaded fish fingers.
  • Pan-fry for 3–4 minutes per side until the crust is deeply golden brown and the fish is opaque and flakes easily in the center. Transfer to a paper towel-lined plate to drain.
  • Lightly butter the inside of your bread slices (or toast them if you prefer a sturdier sandwich).
  • To assemble, spread a generous layer of tartar sauce on the bottom slice of bread. Add a handful of crisp lettuce, top with two hot fish fingers, and finish with the top slice of bread. Serve immediately.

  • Air Fryer Method: To make these with less oil, spray the breaded fish fingers generously with cooking spray and air fry at 400°F (200°C) for 10–12 minutes, flipping halfway through.
