Origin Chicken Quesadillas
The quesadilla traces its roots back to central and northern Mexico, where indigenous people historically stuffed fresh corn tortillas with vegetables, pumpkin, and squash. When Spanish settlers introduced dairy products to the region, the dish evolved into the beloved cheese-filled classic we know today, reflecting the fascinating evolution of traditional Mexican street food. This modern, Tex-Mex-inspired adaptation features heavily seasoned chicken and large flour tortillas, honoring its comforting history while remaining a quick, versatile staple in contemporary households worldwide.

kcalIngredients
2 large (10-inch) flour tortillas
1 cup cooked chicken breast, shredded or diced
1 cup Mexican-style cheese blend or Monterey Jack, freshly grated
1 tbsp olive oil
1 tsp taco seasoning (or a mix of chili powder, cumin, and garlic powder)
1 tbsp unsalted butter
2 tbsp red onion, finely diced
2 tbsp fresh cilantro, chopped
Optional: Jalapeño slices for heat
For serving: Sour cream, fresh salsa, or guacamole
Directions
- In a small bowl, toss the cooked, shredded chicken with the olive oil and taco seasoning until the meat is evenly coated and flavorful.
- Lay the flour tortillas flat on a clean cutting board. Sprinkle half of the grated cheese evenly over one half of each tortilla.
- Distribute the seasoned chicken, diced red onion, fresh cilantro, and jalapeños (if using) directly over the cheese layer.
- Top the chicken mixture with the remaining grated cheese. This second layer of cheese acts as a “glue” to hold the quesadilla together.
- Fold the empty half of the tortilla over the filling and press down gently to seal it into a half-moon shape.
- Heat a large non-stick skillet over medium heat and melt half of the butter.
- Carefully place one folded quesadilla into the skillet. Cook for 3 to 4 minutes until the bottom is deeply golden brown and crispy.
- Use a wide spatula to carefully flip the quesadilla. Cook for another 3 to 4 minutes on the other side until golden and the cheese inside is completely melted. Repeat with the second quesadilla using the remaining butter.
- Remove from the skillet, let it rest for 1 minute so the cheese sets slightly, then slice into wedges and serve hot with sour cream and salsa!
Notes
- The Butter Trick: While you can toast quesadillas in a dry pan or with cooking spray, melting a small amount of butter in the skillet is the secret to achieving that rich, flaky, restaurant-style golden crust.
- Grate Your Own Cheese: Pre-shredded cheese in bags is coated in anti-caking agents that prevent it from melting smoothly. Grating a block of Monterey Jack or cheddar yourself will yield a much creamier texture.
- Make Ahead: You can pre-mix the seasoned chicken and chop your veggies days in advance. Store them in airtight containers in the fridge so you can assemble and toast a fresh quesadilla in under 5 minutes whenever hunger strikes.
